01 / ABOUT THE PLACE

About this place

A delicate aroma rises from the bowl, followed by waves of multi-layered umami as soon as you take the first sip. Tucked away on an alley in Uchikanda, Sanmaro Tokyo is an accomplished ramen shop that draws discerning noodle lovers with its meticulous extraction of select ingredients. One of its signatures, the special shio soba, rests on a savory meat-based broth enriched with dried seafood and rounded out by a mellow salt tare. Made with domestic whole-wheat flour, the noodles have a clean bite that harmonizes with the clear, golden soup and leaves a gentle finish.

Appreciating the Noodles in Konbu Water Tsukemen

Another major draw is the tsukemen, served with noodles submerged in a chilled konbu water brewed from Hokkaido ma-konbu, dried anchovies from Ushibuka, Makurazaki honkarebushi bonito flakes, scallop adductor muscles, and log-cultivated shiitake mushrooms. When the dish arrives, diners are encouraged to lift a few strands on their own before dipping; the kelp's viscous broth and deep dried-seafood essence coat the mouth immediately. Adding a pinch of Yagatame moshio (seaweed salt), fragrant Kioku sansho grape pepper, or yuzu kosho from the counter brings the aroma of wheat and fresh mineral salinity to the fore. From there, alternating dips into the shio broth—infused with asari clams and niboshi—or the shoyu dipping soup, where fish stock is supported by a meat base, ensures that every bite remains engaging.

A Relaxed Setting for Solo Dining

With its wood-toned counter seating and calm atmosphere, the shop offers a quiet space where you can focus entirely on your bowl. Whether stopping by during a weekday lunch break or for a peaceful dinner after work, it is an inviting retreat for a bowl of refined ramen.
